4 Recipes for Easy Easter Entertaining

At Marich, creating fun, enjoyable, feel-good experiences is one of our main goals. It’s why Easter is one of our favorite times of the year. Crafting those sweet, brightly colored Easter treats always brings us a boost of excitement for all the little ones anticipating a visit from the Easter Bunny. 

The thing is, the little ones aren’t the only ones with a sweet tooth, or a desire to have a little fun. Which is why we put together a list of easy recipes the whole family will love.

1. Classic Easter Egg Nests

Nothing says Easter like these sweet and crunchy Easter egg nests, featuring our favorite Easter treat, the Spring Almond Eggs (roasted almonds coated in rich dark chocolate!). This recipe by Nicole Carey Co. is quick and simple to recreate and the perfect way to get the little ones involved! Plus, they make for amazing showstoppers at your Easter party or dinner!

2. Milk Chocolate Cherry & Almond Granola Bars

These chewy granola bars combine ripe, sweet cherries enrobed with creamy milk chocolate with the crunch of toasted almonds, making them the perfect snack-all-day option for Easter day. Plus, they play well among both kids and adults alike. 

Recipe:

3 cups old fashioned rolled oats

1 cup Marich® Pancrafted™ Milk Chocolate Cherries

1/2 cup slivered almonds, lightly toasted

1/2 cup almond butter

1/3 cup honey

1/4 cup packed light brown sugar

1 tsp ground cinnamon

1/2 tsp salt

1 large egg, lightly beaten

1 tsp vanilla extract

 

Makes: Approximately 20 bars

Time: 20 minutes prep, 25 minutes cook time

Directions:

  1. Heat oven to 350°F. Lightly coat a 13 x 9-inch baking pan with cooking spray or line with parchment paper.
  2. Combine the oats, chocolate-covered cherries and almonds in a large bowl.  Set aside.
  3. Place almond butter and honey in a microwave-safe bowl.  Microwave at HIGH for 10 seconds and stir until melted.  Mix in brown sugar, cinnamon, salt, egg and vanilla until combined.
  4. Fold almond butter mixture into dry ingredients until well coated. Press mixture into the prepared baking pan. Bake 20 to 25 minutes or until edges are golden brown.
  5. Remove from the oven and leave in pan until completely cooled.  Once cooled, transfer to a cutting board and cut into 4 x 1-1/2-inch bars.

3. Caramel Carrot Cake with Vanilla Bean Cream Cheese Frosting

4. Good Morning Granola

The perfect way to give you an extra boost on Easter morning: oats, toasted almonds, coconut chips, popped quinoa, and Dark Chocolate Espresso Beans! Enjoy with fresh fruit and yogurt, sprinkle on french toast, or save for some mid-afternoon ice cream.

Recipe:

3 cups old fashion rolled oats

1 cup natural almonds, chopped

1 cup unsweetened coconut chips

2 tsp ground cinnamon

1/2 tsp salt

1/4 cup butter or coconut oil

1/4 cup packed brown sugar

1/4 cup maple syrup or honey

1 cup Marich® pancrafted™ Dark Chocolate Espresso Beans, chopped

3 Tbsp toasted quinoa (see cook’s tip)

Makes: 8 cups

Time: 20 minutes prep, 35 minutes cook

Directions:

  1. Heat oven to 300°F. Mix oats, almonds, coconut, cinnamon and salt in medium bowl.
  2. Place butter, brown sugar and maple syrup in small saucepan.
  3. Bring to a boil over medium heat, stirring occasionally. Boil 1 minute. Pour over oat mixture; toss to coat. Spoon into parchment-lined sheet pan.
  4.  Bake in 300°F oven 30 to 35 minutes, stirring every 15 minutes until lightly browned. Remove from oven, stir.
  5. Sprinkle Dark Chocolate Espresso Beans and quinoa over granola (do not stir). Refrigerate 15 to 20 minutes to set chocolate. Store at room temperature in airtight container.

Cook’s Tips: To make toasted quinoa, heat 3 Tbsp white quinoa in heavy skillet (cast iron preferable) over medium-low heat. Cook and stir until quinoa is light brown and starts popping.
